Incredible, I have it in my head, and ingredients as to what I'm going to make, but somehow as the cooking commences, somehow I get off track and something else is created. I can thank the food Gods that it's always edible and no one has suffered and or died from the "creative" process, lol

Mom, can I have mashed potatoes for dinner?
Hadn't purchased groceries yet, before I responded I rush to see if I had the ingredients.
This is exactly what I had:
2 pieced of frozen fish
4 yellow potatoes
Thawed out the fish in lime juice.
Coating:
Sprinkle of cornmeal
Bread crumbs
Garlic powder
Fried
Boiled potatoes with two pegs of garlic.
To the hot potatoes I added:
Butter
A dollup of cream cheese
Shredded cheddar
A sprinkle of cilantro
Did not add salt
Mashed to perfection, stuck fish sticks in it
And served with a dip made of:
Dijon mustard
Plum sauce
Served it to rave reviews.
