Pickled Yellow Peppers

Found myself in Ocean's Supermarket, and I picked up a bag of yellow peppers, or as it read on the bag, "Yellow Hot Peppers".  Somehow, I did not see the word HOT!

Anyhoo, got home, decided to try cooking with one.  Tasted the food, and ummm, yea, my 5 year old cannot eat it.  No way, the peppers were truly  that hot!  So, what did I do?  I decide to cut up the peppers and let them become one in a jar of vinegar and olive oil.

Glad I did that, now I cannot get enough of them.  Something wonderful has happened to the peppers, they are not as insanely hot as before, somehow, the flavour and taste is more subtle and even more delicious.

The original idea was squashed

Incredible, I have it in my head, and ingredients as to what I'm going to make, but somehow as the cooking commences, somehow I get off track and something else is created. I can thank the food Gods that it's always edible and no one has suffered and or died from the "creative" process, lol

Homemade chips, fried plantains

The dip is something I literally threw together:

Mayo
Lime juice
Sugar
Seasoned salt
Garlic powder
Chopped cilantro
Garlic
Chopped up cooked shrimp

Preparing the potatoes for my cajun fish, shrimp and chips

Shrimp and fish are thawing out in lime juice...when that's done, they will be dressed and placed on the grill around 7pm....
